  • Blue oyster mushrooms are velvety, savory, and mild and pair perfectly with just about any recipe! Blue oysters are a staple here at North Spore (going all the way back to when we began as an urban farm.) After perfecting our blue oyster kits over the years, they’ve become one of the easiest kits to get multiple fruitings from and should produce a second flush of mushrooms (or more!)
  • Hen of the woods, aka Maitake (Grifola frondosa) is a succulent polypore with a delicate feathery texture and earthy rich flavor. Its lacy sides make it a great option for frying, roasting, sautéing, and adding a visual flair to many dishes. Hen of the woods mushrooms are great for enthusiast growers who have had some success with other more advanced species. Because it is not a strong competitor, it requires a different cultivation strategy and works best when logs are steam sterilized, incubated and colonized in filter patch bags, then removed from bags and partially buried in a shaded spot.
  • Lion’s Mane (Hericium erinaceus) is a nutritious medicinal mushroom that produces plump white clusters with icicle-like teeth. When cooked, it has a consistency and flavor similar to crab meat. Though slightly harder to get flushes than oysters or shiitake, they are still a great outdoor mushroom for intermediate growers. They colonize quickly and are relatively reliable producers.
  • Lion's mane mushroom kits are the easiest of all our Spray & Grow Kits and produce plump, dense, shaggy mushroom clusters. Lion’s mane is highly versatile and can be enjoyed cooked, dried, extracted, or even steeped as a tea! And because it contains brain-supporting compounds, it’s also a popular medicinal mushroom in addition to a delicious fungi fan favorite. (Meatless crab cakes, anyone?)
  • Reishi produces beautiful, waxy, reddish-brown, shelf-like fruiting bodies that are highly prized for their medicinal properties. These mushrooms are great for enthusiast growers who have had some success growing other mushrooms. This is a species that is cultivated on logs commercially in Asia. However, most commercial producers in North America grow reishi indoors.
  • Shiitake (Lentinula edodes) is a nutritious mushroom that produces medium-to-large, brown, umbrella-shaped caps that tend to fruit throughout the summer to fall growing season. They are a delicious edible fungus from East Asia and their flavor is often described as rich, savory, buttery, and umami. Shiitake tends to produce generous flushes and they are a great mushroom for beginners. They colonize quickly and are the most reliable producers of any species.
