Lion’s Mane Mushroom Sandwich from The Plant Based Palette
Makes 2 Sandwiches
Ingredients
- 2 Vegan Hamburger Buns or Preferred Bread
- 2 cups Raw Lion’s Mane Mushroom
- 2 tbsp Minced Garlic
- 1/2 cup vegan butter
- 2 tbsp Veganaise
- 2-4 slices of Tomato
- 1/2 cup Arugula
- 2 tsp chopped Green Onion
- Dash of Golden State Seasoning Salt from Daybreak Seaweed
- Salt to taste
Instructions
In a frying pan, add vegan butter on low heat. Once fully melted, add in minced garlic on low heat for 10 minutes. Add in shredded raw lion’s mane mushroom and stir around on medium heat until soft. Add salt and herb seasoning to taste. While the garlic is slow cooking, cut the vegan hamburger buns in half. Place in the oven on broil for 3 minutes. Once toasted spread vegan butter onto the toasted buns. On the buns spread vegan mayo. Add sliced tomato, sliced avocado, arugula, garlic butter lion’s mane, chopped green onions and vegan mayo on the top bun. Enjoy!
